I have wondered about this myself. How about this explanation: God wants his representative to be wholly consecrated to him. Ear, hand, and food entail a certain symbolism. God’s man or woman must LISTEN to his word, DO what he wills, and GO where he sends.

The oil signifies consecration; the blood, cleansing from sin so that this consecration is possible.

Or, from the reverse angle, we must be holy in the things we listen to--what goes into our head (James 1:22), avoiding worldly thinking, gossip, etc; holy in our actions, not using our hands to sin (see 1 Timothy 2:8, Psalm 28:2); and holy in the places we go, not walking into temptation or darkness (Psalm 1:1).
